Swedish Cheesecake

My favorite dessert is Ostkaka (Swedish Cheesecake), it is very different from American cheesecake. It’s made by adding rennet to milk and letting the casein coagulate, it is then baked in the oven and served warm. The other day I really craved some and I found a recipe for “fake” Ostkaka and let me tell you, it tasted very good!!

Fake Swedish Cheesecake
6 servings
1.5 - 2 lbs Squash
4-5 eggs
¾ - 1 cup sugar
1 ¼ cup milk
¼ cup flour
1 teaspoon salt
2 oz or more coarse chopped almonds

Heat up the oven to 375*. Peel and cut up the squash in ½” thick slices and boil soft. Drain and puree in the mixer. Wisk together eggs and sugar, add to the puree with the other ingredients and blend well. Bake in the oven in a greased casserole dishfor approx. 50-60 minutes until golden brown. Let cool some, serve with jam and whipped cream.
